Apples and Almonds



There is something magical about the combination of apples and almonds. The flavor of an apple typically enhances nuts in general, but there's something special about the combination of the sweet apple and the crunchy, earthy, subtly-sweet flavor of an almond.


If you're in need of a recipe to use up some older apples, this is the one for you. With the delightful mixture of cinnamon, brown sugar, and almonds, you can transform soft apples into a prize to be won.


Like most quick breads, this recipe requires just a bit of prep, a few minutes of mixing time, and about an hour of baking time.


To bake this delightful quick bread, you will need:


1 1/2 c. flour

1/2 c. almond flour

1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/2 tsp. cinnamon

1/2 c. butter

1/2 c. sugar

1/2 c. brown sugar

2 eggs

1/2 c. milk

1 tsp. almond extract

1/2 c. almonds, sliced thinly

2 c. peeled apples, diced


To make:


  1. Preheat the oven to 350 F and prepare a loaf pan, spraying the sides and placing a square of parchment paper on the bottom.

  2. In a small bowl, combine flour, baking powder, baking soda, salt, and cinnamon.

  3. Beat together the butter and sugars until the mixture is light and fluffy, about two minutes.

  4. Mix in the eggs, one at a time, making sure each egg is well-mixed before adding the next.

  5. Add in the milk and almond extract.

  6. Mix the dry ingredients with the wet, adding the dry ingredients in batches.

  7. Fold in the almonds and peeled apples.

  8. Bake for about 1 hour. The bread is done when an inserted toothpick comes out clean.


This bread will help you use up those apples while satisfying any sweet tooth you may be experiencing! Try it out and enjoy in the morning with a large glass of milk.
