The sweetest of the squash we offer in our market, butternut squash is perfectly versatile and can be used in both sweet and savory recipes.
If you're looking for a comforting, sweet and savory soup, look no further. This soup plays to all of the butternut's strengths and is good for you -- body, heart and soul.
Just a few simple ingredients and a bit of time, and your kitchen will be full of warm, delicious, autumnal scents.
To create this dish, you will need:
one butternut squash (around 3lbs)
2 carrots, chopped
1 apple, chopped
1 onion, chopped
2 cloves of garlic, diced
3 c. chicken or vegetable broth
1 tsp. sage
1/4 tsp. thyme
1/4 tsp. cloves
salt/pepper to taste
Additional toppings: pumpkin seeds, spinach, 1/4 c. coconut milk, chopped parsley, crusty bread... let your imagination take the lead!
To prepare:
Chop your veggies.
Over medium-high heat, add oil to a pot on the stove and then add the squash, carrots, and onion. Sauté until the onion is translucent, about 3 minutes.
Add in garlic and cook until fragrant, about 2 minutes more.
Put apple in the pot and stir in chicken broth and spices. Bring to a simmer.
Once simmering, reduce heat and put a lid on the pot. Allow to cook for 45 minutes, or until squash is soft.
After soup has simmered, prepare to puree. You can do this by using an immersion blender or by using a regular blender. If you're using a regular blender, work in batches, adding a few scoops at a time.
After all the vegetables are pureed, taste and adjust to your liking.
Feel free to add any toppings, including pumpkin seeds, coconut milk, chopped parsley, and/or crusty bread.
